HAPPY HALLOWEEN!!

It's here! It's Here! One of my favorite holidays of the year! I celebrated this weekend in Birmingham with friends from home.

It was so great to get to be with them and catch up/have fun together. Friday night we had a low key night and went to the new pizza place downtown called SLICE. It was really good. We had a pizza called "Old Skool." So good. Franklin and I ate the whole thing.

On Saturday night, we began the night eating at Rogue Tavern. It is a fairly new bar with big TVs. Some of my friends wanted to be able to watch the Auburn game...boo...while we ate. They were also having a Halloween party there that night, but we decided to stick with our original plans and head to the block party in Lakeview.

We arrived at the block party only to realize they were just starting their costume contest. My friend Jessica, in the Mona Lisa costume, won $300! We had a great weekend.

Rambling Woman

I just entered the blog world a few months ago. Searching the blogosphere, I have found some really great blogs to follow. A few of these blogs have GIVEAWAYS every so often that are fun to enter. Also, who watched the World Series game 6 last night?

I am not that big of a baseball fan, but I enjoy watching sports when it comes down to the final games.
I really wanted the RANGERS to win because they have never won a world series. I was so tired and needed to go to sleep, but I just couldn't quit watching.
Too bad, Rangers lost. On to the final game 7...
WORLD SERIOUS as I like to say.

I hope everyone has a great Halloween weekend. I am headed to Birmingham to visit some friends and celebrate the holiday! I love Halloween. I can't wait to see all of the costumes Saturday night!

Thank goodness the Tide is off on Saturday. Gives my mind a chance to rest. I am going to need it to prepare for the next game against LSU

Costume Reveal

So, after thinking long and hard about what I was going to be for Halloween, I decided on this....






I wanted to be comfortable and not too "do it yourselfish." I can just slip this baby on and I am ready to go. I will be standing on TWO feet though.

I know I will probably look a little crazy, but only one day a year do I get to do so.

Yum

Here is another recipe for you to try. I LOVE mac and cheese. It most definitely is my favorite food. Call me weird, I know. I could probably eat it for every meal...

And then I would look like this....


Anyway, here is revolutionary macaroni and cheese, from where else but Macaroni and Cheesecake

I found this recipe long ago and can’t believe I’m just now making it.  The neat thing about this recipe, is you simmer the noodles in the milk instead of using water then adding it at the end.  It is creamy without being overly cheesy and the mustard gives it a nice depth of flavor.  It still doesn’t top the blue box for me (I know, I know but I just can’t help that I love it so much) but it is a great homemade alternative.  I also made it a bit lighter by using skim milk, reduced fat cheese, and whole wheat pasta.  Feel free to go that route or use full fat ingredients for a super indulgent and decadent meal or side dish.  This can also be baked as well which I opted not to do but I think would be really delicious.  This makes about enough for 4 people with no leftovers, so I would double it if you are having company over.

Revolutionary Mac & Cheese
Source: Cate’s World Kitchen  adapted from White on Rice
Ingredients:
2 cups dried pasta
2 cups 2% milk
1 cup loosely packed shredded cheddar cheese
1 tsp salt
1 tsp dijon mustard
Directions:
In a small saucepan, add pasta and milk.  Bring to simmer, then reduce heat to low and cook for 20 minutes, until pasta is soft, stirring frequently and ensuring milk does not boil.
Turn heat off, add cheese & salt & and stir to combine.  Stir in the mustard a little at a time to taste. Cover and let stand for about 5 minutes, then stir again and serve.
If you would like to bake it at this point, place in a baking dish and top with a generous sprinkling of cheese. Bake at 375 degrees for approximately 10 minutes until cheese has melted.
Makes enough for 4 people with no leftovers (can easily be doubled).
