Scatter-brained

So I don't have much news to report except for a few events. This past weekend Franklin and I went to Lake Guntersville with three other couples. We had a good time acting like college kids again. Saturday was a dreary day, but Sunday turned out to be a good day to float in the water and go for a boat ride. The boys went tubing, which was hilarious and I wish I had pictures. Of course, I forgot to bring my camera on the boat. George and Bo were very daring and jumped off of the cliffs. I was nervous about their decision, but they came up alive. I also forgot my camera on this boat trip...so mad.

On Sunday afternoon I came home and researched my route to the schools I was going to visit yesterday. I feel like I have a better chance of getting a job if I go in person to deliver my information. Maybe then they will know I'm not a freak...or maybe they think I am since I still don't have a job...
I went out to a school yesterday and had an unexpected interview. So we will see how that goes. I wish I would have known so I could have prepared.

I also went to Wal-Mart and got some big plastic tubs to put some of my school stuff in that is in my living room to make it look a little more organized. I can't wait to put all of that stuff to use.

Last night I had a few girls over to my apartment to watch the bachelorette finale. I missed a few episodes and didn't keep up with it like I usually do, but we had fun! I cooked chicken and wild rice casserole (recipe below) for everyone. We also had salad, fruit and wine. Good night! I LOVE J.P. and I am so glad she picked him. I was as worried as he was after that talk with her sister. She is a *****. Just jealous. Anyway, I am glad it worked out the way I hoped!

Tomorrow all of my friends are going to my pledge sister's beach house in Hilton Head. I am very jealous that I can not go. I REALLY don't need to spend the money since I don't have a job and I need to look for a job. I will be thinking of ya'll!

DIY craft update:
My friend Torri completed the book page wreath. She said that she made two of them and hung them on her wall. She is going to send me pictures of them later so I will post them. I can't wait to attempt this.

Now on to the job search. I have a couple of schools I am going to visit today.

CHICKEN-WILD RICE CASSEROLE

Ingredients

·      4 pieces of boneless skinless chicken
·      1 box of Uncle Ben’s stovetop wild rice
·      1 can of Campbell’s cream of celery soup
·      Chopped union
·      ½ teaspoon of salt
·      1 cup of mayonnaise
·      1 can of French green beans (drained)—optional
·      Ritz crackers (3 small packs)
·      3 tablespoons of butter


Directions

o  Boil chicken for about 20 minutes
o  Cook rice following directions on box until thick
o  While both of these cook, mix all ingredients together
o  In a separate bowl, crush Ritz crackers
o  Melt butter and pour on top of Ritz
o  When chicken finishes, chop into little pieces and combine to mixture
o  Combine rice when cooked
o  Mix all together and put into casserole pan
o  Once evenly spread out, top with buttered Ritz crackers
o  Cook on 350 until hot
